Yam Porridge

Yam porridge is a great side dish or main dish with your choice of meat. A variation of this dish includes substituting chicken broth for water and adding stewed chicken to the porridge to become a great “one pot” meal. Other leafy vegetables like spinach and collard greens can also be added to add heartiness and protein. So as you can see it is a very versatile dish!

Ingredients
½ bag of yams or potatoes
½ onion
1 can whole tomatoes
1 tablespoon curry
2 tsp. minced garlic or 2 cloves of garlic
Salt and pepper (red or black) to taste.
¼ cup vegetable or olive oil.
water
Optional Ingredients:
Instead of water use chicken broth
Chicken
Any type of seafood
Ground crawfish
Spinach
Collard greens

Preparation:
Cover raw potatoes with water
Boil for 30 mins
Peel and quarter potatoes, and place back in pot
Add 3 cups of water or broth and continue to cook for 25 mins
Add oil, canned tomatoes, onion, curry, garlic and salt and pepper
If you have ground crawfish or any leafy vegetables, add at this time as well
Stir and cover and continue to cook for another 10 mins
If you are adding meat, add meat, stir and cook for 15 mins
Now dish is ready to serve! Enjoy!
