Black-Eyed Peas

Black-Eyed Peas is a good source of protein. If you are trying to live a more "green" life style or even create a hearty dish for your family, this is the way to go. You can eat it by itself as a side dish, or even add fish, shrimp, or dried Craw fish for a main dish. Perhaps the southern way of doing it would be to put it over grits or rice! Any beans can be used if you do not want to use black eyed peas.

Ingredients:
6 oz bag of dried black eyed peas
1 small white onion
Seasoning of your choice. Some suggestions are: red pepper or black pepper (not both), salt, curry, or garlic
1 small can of tomato paste
3 tblsp. of oil: recommended palm oil or olive oil.

Prep:
Boil beans for about an hour
Add onion, seasoning, paste, oil, and whatever additional ingredients of your choice
Continue to cook uncovered on medium heat for 30 mins
