Moyin-Moyin

This dish can be served as a main dish with meat and rice or as a side dish. You can even eat it in the morning with grits

Ingredients:
6 oz bag of black eyed peas
1 small can of tomato paste
3 tblsp. of minced garlic
1 med. onion
Olive oil for preparing aluminum containers for cooking
Salt and pepper to taste
Aluminum miniature cake pans
Optional ingredients are: fish or shrimp

Preparation:
Grind black eyed peas in blender
Place in bowl and rinse w/cold water. Casing should float to the top of the water, remove casing.
Puree in blender
In a mixing bowl, add sliced onion, garlic, tomato paste, salt, and pepper
Once all ingredients are mixed add water until mixture resembles tomato sauce.
Coat aluminum containers with olive oil
Using a large spoon, place mixture into containers
Using a large pot with 1 cup of water, steam containers on med. heat checking often for 45 mins to an hour. If necessary add more water if the original water evaporates.
Let stand for 20 mins
Dish will be solid and easy to remove
